Propionibacteria freudenreichii is a gram-positive, nonmotile bacteria that plays an important role in Swiss-type cheeses. Propionibacteria freudenreichii contribute to the nutty and sweet flavors of the cheese, and the carbon dioxide by-product is responsible for forming the eyes in Swiss-type cheeses.
